The filling, then the fold
Fillings are prepared at dawn: shrimp peeled one by one, pork chopped by knife, vegetables finely cut. The dough is rolled out one disc at a time, then Mei and Thanh fold. A good har gow has eighteen pleats and stands up on its own in the basket.

Folded in the morning, by hand
Every morning at 8 am, Mei and Thanh fold six hundred dumplings. Eighteen pleats for a har gow, a wrapper thin enough to let the shrimp show through. The bao rise twice before steaming, the pork has been braising since the day before. When the last basket is empty, that's it for the day.
